Chicken Legs With Rum Sauce

Ingredients
  

  • Thick Cut Bacon
  • Chicken Legs
  • Caribbean Barbecue Sauce (recipe below)

Caribbean Barbecue Sauce

  • ½ Cup Ketchup
  • 2 Tablespoon Hot Sauce
  • 2 Tablespoon Soy Sauce
  • 3-4 Cloves Garlic (crushed)
  • 2 Tablespoon Lime Juice
  • 1 teaspoon Lime Zest
  • 1 Cup Brown Sugar
  • 1 Tablespoon Jerk Seasoning
  • ½ Cup Spiced Rum

Instructions
 

  • Cut the thick bacon right done the middle to make a strip.
  • Cut loose the chicken legs tendon and run down the chicken and slide the meat right up to the top.
  • Wrap the chicken leg with the bacon strips but not the entire leg, leave the upper part expose
  • Set up the grill to 325-350 degrees.
  • Place the wrap chicken on the grill indirect opposite to hot coals. Rub the Caribbean sauce on the chicken.
  • Put the lib back on. Cook for about 45-60 minutes. Half way through, flip over the chicken legs and rub the sauce on the other side.
  • Remove the chicken from the grill to plate, pour the remaining sauce on top to finish up.

Caribbean Barbecue Sauce

  • Combine ketchup, soy sauce and brown sugar in a sauce pan, then mix. Add hot sauce and jerk seasoning, mix.
  • Then add zest of lime, lime juice and garlic, mix. Place the sauce pan onto the grill to bring it to simmer.
  • Add the spiced rum and mix to thicken up the sauce.
