Whiskey Peppercorn Sauce
- 1 Cup Beef Broth
- 2 Tablespoons Ground Peppercorn
- 1 Cup Heavy Cream
- 2 Shot of Your Favorite Whiskey
- 1 Tablespoon Shallots
- 1 Cup Mushroom (sliced)
- 1 Tablespoon Dijon Mustard
In a sauce pan, set up on the grill. Pour on the beef broth, add black peppercorn, salt, heavy cream and whiskey. Stir and set aside. Pour oil in a pan, add a shot of whiskey, shallots and the mushroom. Saute for a bit then add the cream peppercorn sauce, stir and thicken up. Add Dijon mustard.
Preheat the grill.
Heat up a frying pan, pour oil. Saute onion, garlic and celery for few minutes. Add breadcrumbs, hot sauce and a little bit of water. Set aside.
From the lobster tail, take out the meat and chop into large chunks. Rub the beef filet with salt pepper and oil. Make pockets in the beef filets.
Add the lobster chunk into the stuffing mix. Once heated up, fill about a tablespoon of the lobster meat stuffing into the beef filet pocket. Fasten the opening with a slice of bacon and secure with toothpicks. Repeat with the other pieces of beef filet.
Place the filet onto the grill and sear both sides for about 1-2 minutes. Then place on indirect heat and cover the grill for about 40 minutes till the meat is cooked. Once meat is cooked remove from the grill.
Place the beef filet on a plate, pour on the whiskey sauce and put butter on top then serve.
