The Smoked Wagyu Tri Tip is an excellent choice. Competition bbq has long been a popular genre that features wagyu meat. Because of the marbling (fat content) in wagyu, which allows for a better-tasting, easier-to-cook brisket, I started cooking it.

Ingredients

  • Wagyu Tri Tip
  • Salt
  • Pepper
  • Garlic Powder
  • Balsamic Base Mopping Sauce

Balsamic Base Mopping Sauce

  • 3/4 Cup Balsamic Vinegar
  • 1/2 Cup Olive Oil
  • 1/2 Cup Water
  • 3 Cloves Garlic (minced)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Crushed Red Pepper
  • 1/2 teaspoon Black Pepper

Instructions

  • First of, you need to season the Tri Tip with pepper, salt and garlic then let it sweat for about an hour.
  • After 30 minutes flip the Tri Tip over to balance the flavor on both sides. This is also the time for you to prepare the grill/smoker. As for this video we will be using a gateway drum but you can use any kind of grill. Run it for about 325 degrees.
  • Once the seasoning worked on the outside, hit it with a BBQ Rub (any kind of Rub that you like). Then season or coat it with a Steak Rub for a coarse texture on the outside. Do the same on the other side. Hang it out for another 15 minutes.
  • Once the grill is stable at 325 degrees, lay the Tri Tip on the grill grate. Leave it for 15 minutes. Then flip it over to cook the other side. By flipping it over, it will cook evenly on both sides.
  • Flip it over every 15 minutes and basted with the Balsamic mop ( see recipe at the bottom), until we get the internal temperature of about 128-130 degrees.
  • Once you reached the 128 degrees internal temperature you can remove the Tri Tip from the grill. Let it rest before cutting it into slices.
  • Make sure to slice or cut it across the grain for tender slices. You now have the Smoked Wagyu Tri Tip for you to enjoy.

Balsamic Base Mopping Sauce

  • Combined everything. This will be mop on while cooking the tri tip on the drum.
