Ingredients
- 2 Lbs Flap Beef
- Marinade (recipe below)
- Flour Tortillas
- Avocado Salsa
- Tomatoes (chopped)
- Onion (copped)
- Cilantro
- Cheese
- Black Pepper
Marinade
- 1/4 Bunch Fresh Cilantro
- 1 Tablespoon Black Pepper
- 1 1/2 Tablespoon Kosher Salt
- 1 Tablespoon Cumin (ground)
- 1 Tablespoon Chili Powder
- 1 Tablespoon Mexican oregano
- 1/4 Teaspoon Ground Cloves
- 4 Cloves Fresh Garlic
- 1/4 Cup Olive Oil
- 1/2 Cup Red Wine Vinegar
- 1/3 Cup Orange Juice
- 1/3 Cup Lime Juice
- 1/2 Bottle Beer
- 1 Orange (sliced)
- 1 Lime (sliced)
Instructions
- Put beef in a ziploc, pour the marinade, add freshly cut lime and orange. Put it in the fridge and let it marinate for 4 hours.
- Set up the grill for direct cooking.
- Put the beef directly on the grill grate. Sear both sides for couple of minutes. Remove from the grill.
- Set tortillas on the grill to heat up. Cut the beef into small bits.
- Set tortillas in a plate, top with avocado salsa, beef, tomatoes, cilantro, onion, pepper, and cheese. Then plate and serve.
Marinade
- Using a mortar and pestle or a food processor combine cilantro, black pepper, kosher salt, cumin, chili powder, oregano, ground cloves, garlic and a little bit of olive oil to form a paste.
- Transfer the paste to another bowl, add olive oil, wine vinegar, orange juice, lime juice and beer. Mix until well incorporated. Set aside.
