Chicken Legs With Rum Sauce

Ingredients
- Thick Cut Bacon
- Chicken Legs
- Caribbean Barbecue Sauce (recipe below)
Caribbean Barbecue Sauce
- ½ Cup Ketchup
- 2 Tablespoon Hot Sauce
- 2 Tablespoon Soy Sauce
- 3-4 Cloves Garlic (crushed)
- 2 Tablespoon Lime Juice
- 1 teaspoon Lime Zest
- 1 Cup Brown Sugar
- 1 Tablespoon Jerk Seasoning
- ½ Cup Spiced Rum
Instructions
- Cut the thick bacon right done the middle to make a strip.
- Cut loose the chicken legs tendon and run down the chicken and slide the meat right up to the top.
- Wrap the chicken leg with the bacon strips but not the entire leg, leave the upper part expose
- Set up the grill to 325-350 degrees.
- Place the wrap chicken on the grill indirect opposite to hot coals. Rub the Caribbean sauce on the chicken.
- Put the lib back on. Cook for about 45-60 minutes. Half way through, flip over the chicken legs and rub the sauce on the other side.
- Remove the chicken from the grill to plate, pour the remaining sauce on top to finish up.
Caribbean Barbecue Sauce
- Combine ketchup, soy sauce and brown sugar in a sauce pan, then mix. Add hot sauce and jerk seasoning, mix.
- Then add zest of lime, lime juice and garlic, mix. Place the sauce pan onto the grill to bring it to simmer.
- Add the spiced rum and mix to thicken up the sauce.
