Crispy Grilled Wings On Weber

Are you a fan of crispy wings? Try this technique if you want to avoid frying. This recipe is a great way to get that crispy, crunchy and juicy wing on the grill like no other.

Equipment

  • Ziploc
  • Grill

Ingredients
  

  • 4 Lbs Whole Chicken Wings or Party Wings
  • 1/2 Cup Corn Starch
  • 2 Tablespoons BBQ Rub
  • 12 Oz Spicy Garlic Sauce (or any sauce that you like)

Instructions
 

  • First, separate or split whole wings and cut it into pieces by cutting through the joint with a sharp knife. Remove the wing tips from the flat portion.
  • Use a Ziploc bag and pour the cornstarch and the BBQ Rub in the bag and mix. Then drop wings in the bag by portion and toss the bag to coat the wings. After coating put the wings on the wire rack in line. Season with the BBQ rub on both side. Leave it for a few minutes to air dry.
  • While waiting, set up Weber kettle with a charcoal vortex accessory to create indirect high heat. (similar type grills will work with the vortex). Fill the vortex with charcoal and light a fire starter to get the coals hot. After 20 minutes the grill should be ready to cook.
  • Place the cooking grate over the hot coals and arrange the wings outside or near the edge of the grate not over the coals. For a smoke flavor you can ad 1 piece of wood in the center over the coals.
  • After about 10 minutes, flip the wings over for balance cooking. Put the lid back on and cook for about another 20 minutes. Make sure all vents are open 100%. Then, check again and flip over and cook for about 30 minutes. But make sure to check every 5 minutes now so not to overcook the wings.
  • Remove the wings from the Weber for tasting. You can now try it with or without the sauce.
  • Without using a sauce, the Crispy Wings taste like fried chicken cooked on a grill and you can also get the smoke from that piece of wood when cooking giving the wings a unique taste.
  • With sauce, this recipe is on a new level of having the crunch with tons of flavor on the side.
