Ingredients
  

  • 2 16-18 Oz Flank Steaks
  • 12 Oz Tequila Lime Marinade (recipe below)
  • 1 Package Flour or Corn Tortillas
  • 1 Cup Fire Roasted Salsa (recipe below)
  • 1 Cup Fresh Guacamole
  • ¼ Cup Cilantro (chopped)
  • 1 Small White Onion (diced)
  • 1 Lime (cut into wedges)
  • Mexican Style Hot Sauce
  • 1 Tablespoon Kosher Salt
  • 1 Tablespoon Course Ground Black Pepper

Tequila Lime Marinade

  • ¼ Cup Worcestershire
  • ¼ Cup Olive Oil
  • ¼ Cup Water
  • 2 Oz Tequila
  • 2 Oz Lime Juice
  • 2 Tbs Cilantro
  • 2 Cloves Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cumin

Fire Roasted Salsa

  • 6 Roma Tomatoes
  • 2 Fresno Peppers
  • 1 Jalapeño Pepper
  • 1 White Onion (cut in half)
  • 1 Bulb Garlic
  • 1 Lime
  • 1/4 Cup Cilantro
  • 1 teaspoon Cumin
  • Salt
  • Pepper

Instructions
 

  • Place flank steaks in a ziploc bag, pour on the tequila lime marinade over the steaks. Close the bag and remove air. Gently move the steaks around to cover completely in marinade. Marinate in the fridge for 2 hours.
  • Remove flank steak from the bag allowing excess marinade to drip off. Place it in a plate. Season with salt and pepper on both side.
  • Set up directly on the grill grate. Cook for about 2 minutes each side. After 4 minutes, place it on the side of the grill for indirect cooking. Watch for the internal temp to be about 125-130 degrees. Flip steaks for even cooking. Once done, remove from the grill. Let the steaks rest for couple of minutes.
  • Warm up the tortillas on the grill. Cook for about 30 second each side.
  • Add cilantro on the fire roasted salsa. Cut the steaks into thin slices.
  • Set the tortillas on the tray, put on guacamole, add the steaks, top with fire roasted salsa, white onion, cilantro, squeeze a little bit of lemon and add hot sauce. Serve and enjoy!

Tequila Lime Marinade

  • Combine all ingredients. Mix until well incorporated to create the marinade. Set aside.

Fire Roasted Salsa

  • Prepare grill for direct cooking.
  • Wash and dry the vegetables. Place tomatoes, onions, peppers, garlic, and lime on the grill. Cook until outer skin chars, flip over from time to time to get even cooking. Cook for about 5-10 total.
  • Remove vegetables from the grill, cool it off on the cutting board then chop. Put chopped vegetables to a food processor, add cumin, salt and pepper.
  • Mix until all ingredients are well incorporated. Pour in a bowl and refrigerate for an hour.
