Ingredients
  

  • 10 Lb Turkey (with neck and giblets removed)
  • 1.5 Cups Sea Salt
  • 12 Sprigs Fresh Thyme
  • 5 Dried Bay Leaves
  • 1/2 Head of Garlic
  • 3/4 Cup Maple Syrup
  • 3 Gallons Water

Instructions
 

  • Brine the turkey by mixing salt, water, thyme, syrup, garlic, and bay leaves in a big saucepan until the salt dissolves.
  • Refrigerate for 24 hours to chill.
  • Heat smoker to 200 °F.
