Ingredients
  

  • 1 Dozen Sea Scallops
  • Olive Oil
  • 1 Lb Thin Sliced Bacon
  • 1/4 Cup Paprika
  • 2 Tablespoon Garlic Powder
  • 1 Tablespoon Black Pepper
  • 2 Tablespoon Lemon Juice

Instructions
 

  • To make a dry rub, combine lemon juice, paprika, garlic powder, and black pepper in a small bowl.
  • Seal and gently roll the scallops in the 1/4 cup of olive oil before placing them in a sealed plastic bag.
  • Recoat the item with 1 Tbsp of the dry rub mixture by rolling it lightly. For one hour, chill in the refrigerator.
  • Roll a piece of finely sliced bacon around each scallop before spearing with a toothpick.
  • Heat smoker to 210 °F.
  • The interior temperature of the scallops should reach 145 °F after approximately 50 minutes of cooking on the smoker grate. Serve.
