Smoked Lobster Mac And Cheese

Everyone loves mac and cheese. Try this simple recipe and we promise that it's not just a name that sounds delicious but it taste amazingly delicious.

Ingredients
  

  • 1.5 Lbs Lobster Tails
  • Cheese Sauce (recipe below)
  • 8 Oz Elbow Macaroni
  • Panko Bread Crumbs
  • AP Rub
  • Oil
  • Hot Rub

Cheese Sauce

  • 16 Oz Milk
  • 1 Stick Unsalted Butter
  • ¼ Cup All Purpose Flour
  • 1 Cup Sharp Cheddar Cheese (grated)
  • 1 Cup Gruyere Cheese (grated)
  • Juice from ½ Lemon
  • 2 teaspoon AP Rub
  • 1 teaspoon Hot Rub
  • ½ teaspoon Old Bay Seasoning
  • ½ teaspoon Nutmeg (ground)
  • ½ teaspoon White Pepper
  • Black Pepper

Instructions
 

  • Set up the grill for about 300 degrees. Set the lobsters directly on the grill grates. Cook for about 15-20 minutes.
  • Remove lobster from the grill, pull the meat from the tails and give it a nice coarse chop.
  • Use a big cast-iron pot for cooking. Put macaroni, add the cheese sauce and lobster tail, get it all mix together. Layer the top with the cheese, AP rub and the panko bread crumbs.
  • Set the pot on the grill. Cook for 30 minutes at about 300 degrees. Spray oil on top, put the lid back on. Serve and enjoy!

Cheese Sauce

  • In a sauce pan, combine milk butter and flour, mix to make a roux.
  • Add the cheese, lemon juice, AP rub, hot rub, old bay seasoning, nutmeg, white pepper and black pepper. Mix until all are fully incorporated, set aside.
