First, get the grill fired up for about 450-500 degrees. Use ceramic stone on top of the rack, this will absorb all the heat in the grill to better cook the pizza crust.
Prepare the lobster and shrimp. Shrimp should be peeled and deveined already . Put the shrimp in a skewer to stay flat on the grill for easy cooking. For the lobster, cut the shell all the away about the tail, then use your finger and gently work the meat away from the shell so that the meat will ome out easy once cooked. Drizzle with olive oil.
Drizzle with olive oil. Season with garlic salt, dried parsley and crushed red pepper combined. Make sure to season both sides of the shrimp and lobster. After a minute or so, check the seafoods and flip over the shrimp for both sides to cook evenly. After 4-5 minutes, remove the shrimp then check the lobster, if needed place the lobsters in the center of the grate and cook for another 2-3 minutes.
After removing the lobster from the grill, put the pizza stone on the grill. Remove the shrimp off the skewers and the lobster tails from the shells and course chop everything then mix. Set aside.
Knead the pizza dough and form a thin pizza crust. Once done, transfer the dough onto a sheet of butcher paper for easy transfer.
Finished up the pizza by adding the white sauce as the base of the pizza. Then, covered with mozzarella cheese and lastly add the shrimp and lobster. Drizzle with virgin olive oil and season with garlic, salt, parsley and the crushed red pepper.
Put the pizza on the grill to cook for 9-10 minutes. Enjoy!
