Chicken Legs With Rum Sauce

Caribbean Barbecue Sauce
- ½ Cup Ketchup
- 2 Tablespoon Hot Sauce
- 2 Tablespoon Soy Sauce
- 3-4 Cloves Garlic (crushed)
- 2 Tablespoon Lime Juice
- 1 teaspoon Lime Zest
- 1 Cup Brown Sugar
- 1 Tablespoon Jerk Seasoning
- ½ Cup Spiced Rum
Cut the thick bacon right done the middle to make a strip.
Cut loose the chicken legs tendon and run down the chicken and slide the meat right up to the top.
Wrap the chicken leg with the bacon strips but not the entire leg, leave the upper part expose
Set up the grill to 325-350 degrees.
Place the wrap chicken on the grill indirect opposite to hot coals. Rub the Caribbean sauce on the chicken.
Put the lib back on. Cook for about 45-60 minutes. Half way through, flip over the chicken legs and rub the sauce on the other side.
Remove the chicken from the grill to plate, pour the remaining sauce on top to finish up.
Caribbean Barbecue Sauce
Combine ketchup, soy sauce and brown sugar in a sauce pan, then mix. Add hot sauce and jerk seasoning, mix.
Then add zest of lime, lime juice and garlic, mix. Place the sauce pan onto the grill to bring it to simmer.
Add the spiced rum and mix to thicken up the sauce.
