Ingredients
- 2 4Lbs Chickens (halved)
- 3/4 Cup Salt
- 2.5 Quarts Water
- 2 Tablespoon Hot Sauce
- 3/4 Cup Lemon Juice
- 2 Teaspoon Poultry Seasoning
- 1/4 Cup Paprika
- 1 Tablespoon Ancho Chile Powder
Instructions
- Boil water with lemon juice, salt, pepper, poultry seasoning, and spicy sauce in a small pot over medium heat until the salt dissolves, then let to cool.
- In resealable plastic bags, put the chicken halves and cover them with the brine. For eight hours, refrigerate while sealed.
- Rub with the paprika and ancho powder after draining and patting dry.
- Place chickens on your smoker after heating it to 250 °F.
