Lemon Chicken Recipe
This delicious smoked chicken dish benefits from constant juiciness thanks to the pre-smoke soak.

- 2 4Lbs Chickens (halved)
- 3/4 Cup Salt
- 2.5 Quarts Water
- 2 Tablespoon Hot Sauce
- 3/4 Cup Lemon Juice
- 2 Teaspoon Poultry Seasoning
- 1/4 Cup Paprika
- 1 Tablespoon Ancho Chile Powder
Boil water with lemon juice, salt, pepper, poultry seasoning, and spicy sauce in a small pot over medium heat until the salt dissolves, then let to cool.
In resealable plastic bags, put the chicken halves and cover them with the brine. For eight hours, refrigerate while sealed.
Rub with the paprika and ancho powder after draining and patting dry.
Place chickens on your smoker after heating it to 250 °F.
Turn skin-up and cook for a further two hours after cooking for an additional hour covered. Serve.
