Ingredients
  

  • 2 4Lbs Chickens (halved)
  • 3/4 Cup Salt
  • 2­.5 Quarts Water
  • 2 Tablespoon Hot Sauce
  • 3/4 Cup Lemon Juice
  • 2 Teaspoon Poultry Seasoning
  • 1/4 Cup Paprika
  • 1 Tablespoon Ancho Chile Powder

Instructions
 

  • Boil water with lemon juice, salt, pepper, poultry seasoning, and spicy sauce in a small pot over medium heat until the salt dissolves, then let to cool.
  • In resealable plastic bags, put the chicken halves and cover them with the brine. For eight hours, refrigerate while sealed.
  • Rub with the paprika and ancho powder after draining and patting dry.
  • Place chickens on your smoker after heating it to 250 °F.
  • Turn skin-up and cook for a further two hours after cooking for an additional hour covered. Serve.
