- 5 Lbs Ground Beef
- 2 Tablespoon Sugar Cure
- 2 Teaspoon Mustard Seeds
- 2 Teaspoon Liquid Smoke
- 5 Teaspoon Tender Quick
- 2 Teaspoon Crushed Red Pepper
- 2 Teaspoon Ground Black Pepper
- 1 Teaspoon Garlic Powder
- 2 Teaspoon Peppercorns
All ingredients should be combined before being placed in a lidded plastic container. Mixing roughly every 12 hours, chill for three days in the refrigerator.
Heat smoker to 220 °F.
Take your mixture out of the refrigerator and form it into sausages.
Set your sausages on the grill for nine hours, or until the internal temperature reaches 160 °F. Serve.
