Maple Turkey Recipe
This turkey is so succulent and tasty that it would be a wonderful Thanksgiving Day substitute (or any day, really).

- 10 Lb Turkey (with neck and giblets removed)
- 1.5 Cups Sea Salt
- 12 Sprigs Fresh Thyme
- 5 Dried Bay Leaves
- 1/2 Head of Garlic
- 3/4 Cup Maple Syrup
- 3 Gallons Water
Brine the turkey by mixing salt, water, thyme, syrup, garlic, and bay leaves in a big saucepan until the salt dissolves.
Refrigerate for 24 hours to chill.
Heat smoker to 200 °F.
With the help of kitchen twine, secure the turkey's legs and tuck in the wing tips. With a drip pan full of water on the smokebox's bottom, place the turkey inside the smoker.
Keep the temperature steady while smoking for five hours.
Allow to rest for 20 minutes before carving and serving.
